Honestly I bake gluten free bread myself. I bought a few online courses that demonstrated the method an I've since trained it weekly. I don't think it's difficult anymore. There are cheap courses on udemy (I like this one https://www.udemy.com/course/deliciously-gluten-free-artisan-breads/ and guess their sourdough course is of same standard although I haven't tried it myself https://www.udemy.com/course/naturally-gluten-free-sourdough-bread/ ) The courses are on sale right now for € 12.99 - Udemy has quite often sales in this price range). Other alternatives I use are pancakes and waffles. I experiment with the waffle dough and sometimes the dough is 50% vegetables and 50% normal gluten free waffle dough. It works fine. Waffles are also great cold and great in the lunch box.

If you buy e.g. a Tefal Snack Iron you can easily make waffles, pancakes and doughnuts (with a waffle dough).
