Brad Traversy has a full stack ecommerce app course on Udemy called MERN eCommerce From Scratch. Its repo is available for free at GitHub, you can check it to see if it fits your needs. It is using JWT on backend and PayPal for payment process, but I don't know how production ready/secure it is.

Take the course I listed above and you'll have all you need to move forward. Not everything is deeply explained, but you will see the structure around how Brad builds an application, which is very important.
The course covers making your own server/RESTful API and connecting a React client to it. Brad shows a lot of helpful tips and tricks along the way. I'm fairly new to Node dev and have only built a few projects and learned a ton from that course.
Brad also teaches Redux, which is amazing for state management.
Buy the course for a few bucks and spend a couple weeks taking it - you'll be very thankful you did.
