I'm not sure about courses but I study game design at university and for realistic characters we sculpt them in zbrush and only use maya for retopology and creating normal maps. Its honestly not too complex and theres plenty of free videos on youtube but I had a quick look and this course looks like it covers all the basics

I know this because I took the same class, I highly suggest if you havent made a basemesh in maya for zbrush before you do.

And now onto the topic at hand you need to make sure you give credit to the artist who made the concept you are working from and the class that is helping you accomplish this task. Otherwise it is blatent theft.
