Anything by Marc Lamberti is terrific IMHO. My career as a data engineer to this point has been centered around Airflow and his courses cover much of what you'd want to do. Astronomer (where he now works) are also a great resource, Kaxil Naik from astronomer has a lot of really great blog posts too.
