I've been doing this one. It teaches you how to understand Shaderlab (The shader language Unity uses) with many examples. Udemy courses are almost always on sale. You can always expect them to be around $10 - $15 if they aren't. It's not a whoole lot, but it's better than trying to follow some random tutorial on YouTube.

Actually, for shaders, this is the only course I followed but I practised the examples, completed all the challenges etc..

I'm in the same boat. I would take a look at these 2 courses. I can't vouch for how good they are (yet) but I plan on purchasing on of them within the next month. Also, wait for a sale and you can get it for under $15.

It seems very in-depth. Definitely not the quickest way to get into shaders but I'm hoping it pays off. Can't say if I'd recommend it yet as I've just started. I was going to take this one because I love Penny but it seemed outdated.

Much like you, I was working on a project that got out of hand; an FPS RPG procedurally generated dungeon crawler, so I feel you. In planning my next project I've narrowed down the scope quite a bit and set stages for "finishing"/polishing before moving onto the next set of features.

Penny de Bull offers a course called Shader Development from Scratch for Unity with CG. It’s a few years old now but she tends to be a great teacher and the course appears to have been updated to at least 2019.
