I did most of the last course (dipped in and out for the things I needed) and I would recommend it, with two caveats: 1. don't get hung up on using the local environment that he demonstrates, just use whatever works for you, and 2. there are errors in the live search lesson. At the time I did the course these hadn't been rectified and that lesson notes are full of complaints about enquiries being ignored. Best to skip that section entirely IMHO. I'd also recommend this course, along with the same caveat about the local dev environment: https://www.udemy.com/course/wordpress-theme-and-plugin-development-course/ Best of luck with it. Once you get to grips with ACF you will have taken a huge step towards getting to where you want to be.

This course teaches the building blocks of what you need to know in a practical way. I highly, highly recommend it. It’s on sale for ~15 dollars right now.

Depending where your at, if you can build a site with HTML CSS and JS comfortably then I suggest learning a little PHP then diving into this course.

I think it depends on the course and instructor. I’ve taken some really bad Udemy courses and some really good ones.
The upside is there all (or close to all) have a 30 day return policy so if you don’t like it, return it.
When I was starting with WordPress I took Brad Hussey’s Courses on WordPress and they were VERY helpful.
They may be a bit dated now though. I also used TeamTreehouse but I was told they went downhill since I used them.
On the upside, their WordPress instructor was really good and he’s produced his own course on Udemy.
His name is Zac Gordon
Hope some of this helps point you in the right direction!

Get comfortable with the WordPress hierarchy. I wouldn't suggest underscores when starting out. Try this free YouTube course

And these 2 Udemy Courses

Along with the WordPress theme developers handbook. https://developer.wordpress.org/themes/
You're good to go 👍
